I recall a while ago I saw a demo of a Rock Band like game in which you had to play the actual chords rather than press the buttons on a mock guitar - That seemed very useful. This technology may not be the same, but heck, anything works.
In any case - The crowd playing guitar hero and rock band is simply people trying to have fun. Some will enjoy the added degree of realism and dificulty, some wont - It wont have a major effect on the status of music worldwide, but it should be fun.
Problem with learning by pressing buttons is you'll get even more cloth eared guitarists. I've had a housemate claim she could play guitar, and start playing something that sounded dreadful, she insisted it was right, problem being the guitar was in open tuning.

I think there's no harm in trying. I don't know how much of an effect it's going to have but I think Guitar Hero and Rock band are both very positive games for music. I'm a big fan of both of them.
